Yep another good email! I'm Thankful for...sometimes it's all in how you look at things that matters the most!

I am Thankful :

For the wife who says it’s hot dogs tonight,because she’s home with me & not out with someone else.

For the husband who is on the sofa being a couch potato, because he’s home with me & not out at the bars.

For the teenager who is complaining about doing dishes because it means she is at home & not on the streets.

For the taxes I pay because it means that I am employed.

For the mess to clean after a party because it means I have been surrounded by friends.

For the clothes that fit a little too snug because it means that I have enough to eat.

For my shadow that watches me work because it means that I ma out in the sunshine.

For the lawn that needs mowing, windows that need cleaning, and gutters that need fixing because it means that I have a home.

For all the complaining I hear about the government because it means we have freedom of speech.

For the parking spot I find at the far end of the parking lot because it means I am capable of walking and I have been blessed with transportation.

For my huge heating bill because it means I am warm.

For the lady behind me in church who sings off key because it means that I can hear.
For the pile of laundry and ironing because it means I have clothes to wear.

For weariness and aching muscles at the end of the day because it means I have been capable of working hard.

For the alarm that goes off early in the morning hours because it means I am alive.

Dangerous mulch!

Goodness, just got this email...My question, Who's the brainiac that thought it would be good to make a mulch that smells like chocolate so as to attract dogs & cats but make it toxic so it can kill them!?

Please tell every dog or cat owner you know. Even if you don't have a pet, please pass this to those who do.

Over the weekend the doting owner of two young lab mixes purchased Cocoa Mulch from Target to use in their garden. They loved the way it smelled and it was advertised to keep cats away from their garden. Their dog Calypso decided that the mulch smelled good enough to eat and devoured a large helping. She vomited a few times which was typical when she eats something new but wasn't acting lethargic in any way. The next day, Mom woke up and took Calypso out for her morning walk . Half way through the walk, she had a seizure and died instantly.

Although the mulch had NO warnings printed on the label, upon further investigation on the company's website, this product is HIGHLY toxic to dogs and cats.

Cocoa Mulch is manufactured by Hershey's, and they claim that 'It is true that studies have shown that 50% of the dogs that eat Cocoa Mulch can suffer physical harm to a variety of degrees (depending on each individual dog). However, 98% of all dogs won't eat it.'

Cocoa Mulch, which is sold by Home Depot, Foreman's Garden Sup ply and other Garden supply stores, contains a lethal ingredient called ' Theobromine'. It is lethal to dogs and cats. It smells like chocolate and it really attracts dogs. They will ingest this stuff and die. Several deaths already occurred in the last 2-3 weeks. Theobromine is in all chocolate, especially dark or baker's chocolate which is toxic to dogs. Cocoa bean shells contain potentially toxic quantities of th eobromine, a xanthine compound similar in effects to caffeine and theophylline. A dog that ingested a lethal quantity of garden mulch made from cacao bean shells developed severe convulsions and died 17 hours later. Analysis of the stomach contents and the ingested cacao bean shells revealed the presence of lethal amounts of theobromine.

Emeril's Baby Bam

Ingredients:
3 tablespoons paprika
2 tablespoons salt
2 tablespoons dried parsley
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon celery salt
Preparation:
Place paprika, salt, parsley, onion powder, garlic powdere, black pepper, oregano, basil, thyme, and celery salt in a mixing bowl. Stir well to combine, using a wooden spoon. Store in an airtight container for up to three months.

Yield: about 3/4 cup

Emeril's Cheese Enchiladas

Ingredients:
5 Tbl vegetable oil
1 (28 oz) can peeled whole tomatoes
2/3 cup chopped yellow onion
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp baby bam (see separate recipe as this is one of Emeril's)
2 tsp minced garlic
1/2 tsp salt
1/2 tsp black pepper
12 corn tortillas
8 oz white cheddar cheese, grated (about 2 cups)
8 oz yellow cheddar cheese, grated (about 2 cups)
1/3 cup finely chopped yellow onion (optional)
2 Tbl chopped fresh cilantro (optional garnish)

Preheat oven to 400.

Lightly grease large baking dish with 1 Tbl of oil.

Puree tomatoes in the blender.

Add 2 Tbl of oil to skillet and add onion, cumin, oregano, baby ban and cook about4 minutes until soft.

Add pureed tomatoes and reduce heat to med-low and cook, stirring until slightly thickened, about 5 minutes.

Season with salt and pepper and stir.

Reduce heat to very low and continue to simmer as you assemble the enchiladas

Heat a second skillet over low heat. Brush each tortilla as you put into pan and warm, about 2-5 seconds per side. Continue until all tortilla's are done. Combine cheeses in a bowl and sprinkle in tortilla, you can sprinkle some onion here if you like.

Roll & place in baking dish,

Pour tomato sauce over the filled enchiladas.

Sprinkle with remaining cheese & bake about 10-12 minutes until bubbly.

Let sit for 5 minutes before serving. Sprinkle with cinantro if desired.

Valentine's Day Cards

So the bug bit & I took some time to get creative! Love doing cards & scrapbooking, but I just never seem to take the time for me anymore to do it! I had bought several new things with my birthday money & so thought i'd better put some to use! Loev these new punches that I bought & the new Mixed Messages set that I ordered from Papertrey Ink. This was the first time I'd used the clear stamps & I was a bit fearful (Yea, I'm a nerd. I know they are just stamps & why would a person be afraid of a stamp!), but it was so easy & it was really nice to see exactly where it was going to stamp. Anyways, here's the finished products! Only did 2 with the vellum paper over the stripes b/c I decided my favorite was the other card using my new punches!

Girls In My Circle

Girls in my circle…

When I was little, I used to believe in the concept of one best friend, and then I started to become a woman.

And then I found out that if you allow your heart to open up, God would show you the best in many friends.

One friend is needed when you're going through things with your man.

Another friend is needed when you're going through things with your mom.

Another will sit beside you in the bleachers as you delight in your children and their activities.

Another when you want to shop, share, heal, hurt, joke, or just be.

One friend will say, "Let's cry together," another, "Let's fight together," another, "Let's walk away together."

One friend will meet your spiritual need, another your shoe fetish, another your love for movies, another will be with you in your season of confusion, another will be your clarifier, another the wind beneath your wings.

But whatever their assignment in your life, on whatever the occasion, on whatever the day, or wherever you need them to meet you with their gym shoes on and hair pulled back, or to hold you back from making a complete fool of yourself, those are your best friends.

It may all be wrapped up in one woman, but for many, it's wrapped up in several.

One from 7th grade, one from high school, several from the college years, a couple from old jobs, on some days your mother, on some days your neighbor, on others, your sisters, and on some days, your daughters.

a couple of "diet friendly" foods!

LOVE this Lean Cuisine pizza, have been eating it for awhile now. Just a couple of weeks ago, my friend Jodi had found these little Buffalo Chicken snacks & whipped um up for us to try - SO GOOD! If memory serves, oen box of those is 4 points on the weight watchers plan.
